B.E.L.T. Sandwich



A classic breakfast sandwich with fried eggs, crispy bacon, fresh lettuce, and ripe tomatoes between two pieces of toasted bread.

Ingredients:

  • 4 slices of bacon
  • 2 large eggs
  • 4 slices of bread
  • 4 leaves of lettuce
  • 2 tomatoes, sliced
  • Mayonnaise, to taste
  • Salt and pepper, to taste

Instructions:

Cook bacon in a skillet over medium heat until crispy

Remove and drain on paper towels

In the same skillet, fry eggs to desired doneness, seasoning with salt and pepper

Toast bread slices until golden brown

Spread mayonnaise on one side of each bread slice

Layer lettuce, tomato slices, bacon, and fried eggs on half of the bread slices

Top with the remaining bread slices, mayonnaise side down, to form sandwiches

Cut sandwiches in half diagonally and serve

Bacon-Egg Breakfast Bites



The crispy bacon and perfectly cooked eggs in these Bacon-Egg Breakfast Bites go so well together. They're a tasty and filling choice for breakfast or brunch.

Ingredients:

  • 6 slices of bacon
  • 6 large eggs
  • Salt and pepper to taste
  • Chopped fresh chives for garnish optional

Instructions:

Preheat your oven to 350F 175C and grease a muffin tin with non-stick cooking spray

Take a slice of bacon and line each muffin cup with it, forming a ring around the edges

Crack one egg into each bacon-lined muffin cup

Season with a pinch of salt and pepper

Bake in the preheated oven for about 15-20 minutes, or until the egg whites are set and the yolks are still slightly runny adjust cooking time based on your preferred egg doneness

Carefully remove the bacon-egg bites from the muffin tin using a spoon or fork

Garnish with chopped chives if desired

Brigadeiro Cupcakes



Brigadeiro Cupcakes are a delightful twist on the classic Brazilian chocolate truffle known as Brigadeiro. These moist and chocolatey cupcakes are filled with a creamy brigadeiro center and topped with more brigadeiro and chocolate sprinkles for an extra indulgence.

Ingredients:

  • 1 cup of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of unsalted butter, softened
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of whole milk
  • 1/2 cup of sweetened condensed milk
  • 1/4 cup of chocolate sprinkles for decoration
  • Brigadeiro Filling:
  • 1 can 14 ounces of sweetened condensed milk
  • 2 tablespoons of unsweetened cocoa powder
  • 2 tablespoons of unsalted butter
  • Chocolate sprinkles optional, for garnish

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with cupcake liners

In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt

Set aside

In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy

Add the eggs one at a time, mixing well after each addition

Stir in the vanilla extract

Alternate adding the dry ingredients and the whole milk, starting and ending with the dry ingredients

Mix until just combined

Fill each cupcake liner about 2/3 full with the cupcake batter

In a small saucepan, combine the sweetened condensed milk, cocoa powder, and butter for the brigadeiro filling

Cook over low heat, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan

Remove from heat and let it cool slightly

Make a small well in the center of each cupcake and spoon in a teaspoon of brigadeiro filling

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the cupcakes comes out clean

Let the cupcakes cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

Once cooled, drizzle the remaining brigadeiro filling over the cupcakes and sprinkle with chocolate sprinkles

Spicy Jalapeno Philly Cheese Steak Sliders



These Spicy Jalapeno Philly Cheese Steak Sliders are a delicious twist on the classic Philly cheese steak sandwich. Packed with flavor from the jalapeno peppers and melted provolone cheese, they make for a perfect appetizer or meal.

Ingredients:

  • 1 lb thinly sliced ribeye steak
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2-3 jalapeno peppers, thinly sliced adjust to taste
  • 6 slices of provolone cheese
  • 6 slider buns
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Mayonnaise and ketchup optional, for serving

Instructions:

Heat olive oil in a skillet over medium-high heat

Add sliced onions and peppers to the skillet

Cook until they start to soften and caramelize, about 5-7 minutes

Remove from the skillet and set aside

In the same skillet, add the sliced ribeye steak

Cook for 2-3 minutes, stirring occasionally, until the meat is browned and cooked to your desired level of doneness

Return the cooked onions and peppers to the skillet with the steak

Toss together and cook for an additional 2 minutes to heat through

Split the slider buns in half and place a slice of provolone cheese on the bottom half of each bun

Spoon the spicy Philly cheese steak mixture onto the cheese-topped buns

If desired, add a dollop of mayonnaise and a drizzle of ketchup on top of the steak mixture

Place the top half of the buns on the sandwiches and press down gently

Kale and Sweet Potato Hash

  • 2 medium sweet potatoes, diced

Yummy Turkey Burgers

Cucumber Mint Quinoa Salad



A healthy salad with quinoa, crisp cucumbers, and fresh mint that is dressed in a tangy lemon vinaigrette.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 cucumbers, diced
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

Run cold water over the quinoa several times to clean it

Put the quinoa and water in a medium-sized saucepan

Bring to a boil, then turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is done and the water is out

Take the quinoa off the heat and let it cool all the way down

Put the diced cucumbers, chopped mint leaves, and finely chopped red onion in a large bowl

Put the olive oil, lemon juice, salt, and pepper in a small bowl and mix them together with a whisk

After the quinoa has cooled, add it to the cucumber mixture

Then, pour the dressing over the salad

Add everything to the bowl and mix it well

Put it in the fridge for at least 30 minutes so the flavors can mix before you serve it

Serve cold, and if you want, add more mint leaves to the top
