Ingredients:
- 1 lb thinly sliced ribeye steak
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2-3 jalapeno peppers, thinly sliced adjust to taste
- 6 slices of provolone cheese
- 6 slider buns
- 2 tablespoons olive oil
- Salt and pepper to taste
- Mayonnaise and ketchup optional, for serving
Instructions:
Heat olive oil in a skillet over medium-high heat
Add sliced onions and peppers to the skillet
Cook until they start to soften and caramelize, about 5-7 minutes
Remove from the skillet and set aside
In the same skillet, add the sliced ribeye steak
Cook for 2-3 minutes, stirring occasionally, until the meat is browned and cooked to your desired level of doneness
Return the cooked onions and peppers to the skillet with the steak
Toss together and cook for an additional 2 minutes to heat through
Split the slider buns in half and place a slice of provolone cheese on the bottom half of each bun
Spoon the spicy Philly cheese steak mixture onto the cheese-topped buns
If desired, add a dollop of mayonnaise and a drizzle of ketchup on top of the steak mixture
Place the top half of the buns on the sandwiches and press down gently
