Gluten-Free Southwestern Chopped Salad



This Gluten-Free Southwestern Chopped Salad is a vibrant party on a platter! Packed with filling and fresh ingredients like quinoa, black beans, avocado, and bell pepper, it's bursting with flavor. The zesty lime dressing adds a tangy kick that ties everything together perfectly.

Ingredients:

  • 2 cups cooked quinoa
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

Cook the quinoa and put it in a large bowl

Add the corn, black beans, diced bell pepper, diced red onion, diced avocado, cherry tomatoes, and chopped cilantro

Add lime juice, olive oil, ground cumin, chili powder, salt, and pepper to a small bowl

Use a whisk to mix the ingredients

Add the dressing to the salad and mix it all together

Serve right away or put in the fridge until you're ready to serve

Paleo No-Bake Matcha Avocado Tart



A delicious and healthy no-bake tart made with a creamy avocado and matcha filling on top of an almond flour crust. This paleo-friendly dessert is gluten-free and packed with nutrients.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 3 tablespoons maple syrup
  • 1 ripe avocado
  • 1/4 cup coconut cream
  • 2 tablespoons honey or agave syrup
  • 2 teaspoons matcha powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

In a bowl, mix almond flour, melted coconut oil, and maple syrup until well combined

Press the mixture into the bottom and up the sides of a tart pan

Place it in the freezer to set while preparing the filling

In a blender, combine avocado, coconut cream, honey or agave syrup, matcha powder, vanilla extract, and a pinch of salt

Blend until smooth and creamy

Pour the filling into the prepared crust and smooth the top with a spatula

Place the tart in the refrigerator for at least 2 hours to set

Once set, slice and serve chilled
