Ingredients:
- 2 medium sweet potatoes, diced
- 2 cups chopped kale
- 1/2 red onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions:
Heat the olive oil in a large skillet over medium-high heat
Add the diced sweet potatoes and cook for about 10 minutes, or until they start to soften and turn golden brown
Stir in the chopped red onion and minced garlic, and cook for an additional 2-3 minutes until the onion becomes translucent
