Lentil Quesadillas



These Lentil Quesadillas are a delicious and healthy twist on the classic quesadilla. Packed with protein from lentils and filled with colorful vegetables and cheese, they make for a satisfying and flavorful meal. Perfect for a quick lunch or dinner!

Ingredients:

  • 1 cup cooked lentils
  • 1 cup shredded cheddar cheese
  • 4 whole wheat tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tsp cumin powder
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

Put the diced tomatoes, onions, bell peppers, cumin powder, chili powder, salt, and pepper in a large bowl

Add the cooked lentils and mix them all together

Combine well

Set a pan on medium heat and add the olive oil

Cover half of a whole wheat tortilla with a quarter of the lentil mixture

Place the tortilla in the skillet

On top of the lentil mix, sprinkle a quarter of the shredded cheddar cheese

To make a half-moon shape, fold the other half of the tortilla over the filling

It should be cooked for two to three minutes on each side, or until the cheese melts and the tortilla gets crispy

Do it again with the rest of the tortillas and filling

Take the quesadillas out of the pan, let them cool a bit, and then cut them into wedges

Serve hot, and if you want, top with more cilantro

Caprese Corn Tortellini Salad



This Caprese Corn Tortellini Salad is a delightful blend of flavors. The sweetness of cherry tomatoes, the creaminess of fresh mozzarella, and the freshness of basil, all combined with corn tortellini and a balsamic vinaigrette dressing.

Ingredients:

  • 9 oz corn tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, cubed
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions:

Cook the corn tortellini according to package instructions

Drain and let it cool

In a large bowl, combine the cooked tortellini, cherry tomatoes, fresh mozzarella, and chopped basil

In a small bowl, whisk together the extra-virgin olive oil and balsamic vinegar

Season with salt and pepper to taste

Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are coated

Refrigerate for at least 30 minutes before serving to allow flavors to meld

Serve chilled, garnished with additional basil leaves if desired

Smoked Chicken Wings



These mouthwatering, flavorful, and marinated smoked chicken wings are ideal for your Masterbuilt smoker.

Ingredients:

  • 3 lbs chicken wings
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • Wood chips for smoking

Instructions:

Preheat your Masterbuilt smoker to 225F

In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper to create the marinade

Place chicken wings in a large resealable plastic bag and pour half of the marinade over them

Seal the bag and refrigerate for at least 1 hour, or overnight for best results

Soak wood chips in water for about 30 minutes before smoking

Remove chicken wings from the marinade and let excess drip off

Discard used marinade

Place soaked wood chips in the smoker's tray

Arrange chicken wings on the smoker racks

Smoke the wings for approximately 2

5 to 3 hours or until they reach an internal temperature of 165F, adding more wood chips as needed for smoke

During the last 15 minutes of smoking, baste the wings with the remaining marinade for added flavor

Once done, remove the smoked chicken wings from the smoker and let them rest for a few minutes before serving

Spicy Nacho Salad



This Spicy Nacho Salad will make your salads more interesting. The salad has crunchy tortilla chips, black beans, tomatoes, olives, cheese, and fresh greens. It's dressed in a tangy chili-cumin sauce and topped with a creamy spicy sauce. It's great for a quick and tasty meal.

Ingredients:

  • 2 cups of mixed greens
  • 1 cup of tortilla chips, crushed
  • 1 cup of black beans, drained and rinsed
  • 1 cup of diced tomatoes
  • 1/2 cup of sliced black olives
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of diced red onion
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of sour cream
  • 2 tablespoons of salsa
  • 1 tablespoon of olive oil
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste

Instructions:

Crush the tortilla chips and add them to a large bowl along with the black beans, tomatoes, black olives, cheddar cheese, tomatoes, and red onion

Mix the chili powder, cumin, olive oil, and a little salt and pepper in a small bowl with a whisk

Add this dressing to the salad and mix it in

Add the dressing to the salad and gently toss it to cover all the ingredients

Put the sour cream and salsa in a different small bowl and mix them together to make a creamy, spicy dressing

Dress the salad with the creamy, spicy dressing, or put it on the side

Put chopped fresh cilantro on top of the salad

Serve your Spicy Nacho Salad right away and enjoy it!

Meringue Reindeer Cookies



For holiday parties, these cute and festive Meringue Reindeer Cookies are a great choice. These are fluffy and light, and they are sure to make everyone smile!

Ingredients:

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 pretzels twists
  • 24 edible candy eyes
  • 12 red M&M's for noses

Instructions:

Preheat your oven to 225F 110C

Line two baking sheets with parchment paper

In a clean, dry bowl, beat the egg whites until they become foamy

Add the cream of tartar, vanilla extract, and salt

Continue beating until soft peaks form

Gradually add the sugar while continuing to beat until stiff, glossy peaks form

Transfer the meringue mixture to a piping bag fitted with a round tip

Pipe meringue onto the prepared baking sheets to create reindeer head shapes

Insert two pretzel twists as antlers into each reindeer head

Place candy eyes and a red M&M as the nose on each reindeer

Bake in the preheated oven for about 1

5 hours or until the meringue is dry and firm

Turn off the oven and let the cookies cool inside for an additional 1 hour

Remove from the oven and enjoy your adorable Meringue Reindeer Cookies!

Black Bean Rice Patties



Black bean rice patties are a tasty and wholesome vegetarian entre. These flavorful and protein-rich patties are adaptable and can be eaten as a burger or on their own.

Ingredients:

  • 1 cup cooked black beans, drained and mashed
  • 1 cup cooked brown rice
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for cooking

Instructions:

Mashed black beans, brown rice, breadcrumbs, red onion, cilantro, cumin, garlic powder, salt, and pepper should all be combined in a big bowl

Blend the ingredients until they are well combined

After dividing the mixture into equal parts, form each into a patton

In a skillet over medium heat, warm the olive oil

The patties should be cooked through and golden brown after 3 to 4 minutes on each side

Serve the black bean rice patties in a burger bun with your preferred toppings or with your preferred dipping sauce

The Most Millennial Avocado Toast Well and Full



With its creamy avocado, fresh vegetables, and whole grain bread, this avocado toast is the perfect meal for millennials. This meal is quick, healthy, and looks great on Instagram. It's great for breakfast, brunch, or a light lunch.

Ingredients:

  • 1 ripe avocado
  • 2 slices of whole grain bread
  • 1 small tomato, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/2 lime, juiced
  • Salt and pepper, to taste
  • Handful of microgreens or sprouts, for garnish

Instructions:

Toast the whole grain bread until it turns golden brown

While that's going on, mash the avocado with salt, pepper, and lime juice in a bowl

Cover the toasted bread slices with the mashed avocado

Put thin slices of tomato and red onion on top of each slice

Add sprouts or microgreens as a garnish

Serve right away and enjoy!
