Lentil Quesadillas



These Lentil Quesadillas are a delicious and healthy twist on the classic quesadilla. Packed with protein from lentils and filled with colorful vegetables and cheese, they make for a satisfying and flavorful meal. Perfect for a quick lunch or dinner!

Ingredients:

  • 1 cup cooked lentils
  • 1 cup shredded cheddar cheese
  • 4 whole wheat tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tsp cumin powder
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

Put the diced tomatoes, onions, bell peppers, cumin powder, chili powder, salt, and pepper in a large bowl

Add the cooked lentils and mix them all together

Combine well

Set a pan on medium heat and add the olive oil

Cover half of a whole wheat tortilla with a quarter of the lentil mixture

Place the tortilla in the skillet

On top of the lentil mix, sprinkle a quarter of the shredded cheddar cheese

To make a half-moon shape, fold the other half of the tortilla over the filling

It should be cooked for two to three minutes on each side, or until the cheese melts and the tortilla gets crispy

Do it again with the rest of the tortillas and filling

Take the quesadillas out of the pan, let them cool a bit, and then cut them into wedges

Serve hot, and if you want, top with more cilantro

Caprese Corn Tortellini Salad



This Caprese Corn Tortellini Salad is a delightful blend of flavors. The sweetness of cherry tomatoes, the creaminess of fresh mozzarella, and the freshness of basil, all combined with corn tortellini and a balsamic vinaigrette dressing.

Ingredients:

  • 9 oz corn tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, cubed
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions:

Cook the corn tortellini according to package instructions

Drain and let it cool

In a large bowl, combine the cooked tortellini, cherry tomatoes, fresh mozzarella, and chopped basil

In a small bowl, whisk together the extra-virgin olive oil and balsamic vinegar

Season with salt and pepper to taste

Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are coated

Refrigerate for at least 30 minutes before serving to allow flavors to meld

Serve chilled, garnished with additional basil leaves if desired

Smoked Chicken Wings



These mouthwatering, flavorful, and marinated smoked chicken wings are ideal for your Masterbuilt smoker.

Ingredients:

  • 3 lbs chicken wings
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • Wood chips for smoking

Instructions:

Preheat your Masterbuilt smoker to 225F

In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, garlic powder, onion powder, smoked paprika, black pepper, and cayenne pepper to create the marinade

Place chicken wings in a large resealable plastic bag and pour half of the marinade over them

Seal the bag and refrigerate for at least 1 hour, or overnight for best results

Soak wood chips in water for about 30 minutes before smoking

Remove chicken wings from the marinade and let excess drip off

Discard used marinade

Place soaked wood chips in the smoker's tray

Arrange chicken wings on the smoker racks

Smoke the wings for approximately 2

5 to 3 hours or until they reach an internal temperature of 165F, adding more wood chips as needed for smoke

During the last 15 minutes of smoking, baste the wings with the remaining marinade for added flavor

Once done, remove the smoked chicken wings from the smoker and let them rest for a few minutes before serving
